Pound a chicken breast nice and thin, then crisp in a cast iron skillet after seasoning and dredging with flour. Set it aside once its golden and slightly crispy. Then into the pan go all of your great veggies, in my case that was some onion, carrots, and mushrooms. When nice and cooked through, add about a cup of wine and some chopped tomatoes. Let it bubble away until thick and slightly sweet from all that carrot. Plate a good spoonful of the sauce, topped with slices of crispy chicken.
